With the additional benefits from the nutrient-dense profiles of chia seeds and whole grain oats, these energy balls pack a powerful punch and are sure to provide a tasty, satisfying burst of energy whenever you need it most! Grab 1 or 2 of these when you’re rushing to get out the door and don’t have time to make anything!

CHEWY ALMOND COCONUT CHOCOLATE CHIP COOKIES

INGREDIENTS

1 Cup - Almond Flour
1/2 Cup - Almond Butter
1/4 Cup - Coconut Oil (melted)
2/3 Cup - Coconut Sugar
1/4 Cup - Dark Chocolate Chips
1/2 Tsp - Baking Soda
1/4 Tsp - Cinnamon
1 Tsp - Vanilla
1 Egg

INSTRUCTIONS

Pre-heat oven to 350F. First, mix together the melted coconut oil, coconut sugar, egg, almond butter, vanilla, and cinnamon. Then add in almond flour and baking soda. Mix everything together well and finish by adding in chocolate chips. Roll into balls and place on baking sheet lined with parchment paper. Bake for 10 minutes then let cool for 5 minutes. Should make about 14-16 cookies.

WHY TRY THESE?

For anyone who likes to bake or simply wants to try something new, these cookies are a must! By using almond flour and almond butter, these cookies pack a little bit more protein and are also significantly lower in carbohydrates compared to regular cookie recipes. By using coconut sugar, they are sweetened naturally and provide more micronutrients as well! When it comes to sustainability and creating consistency within overall dietary habits, balance is key. Constant restriction of the foods you love and enjoy are ultimately what lead to binge eating and excessive snacking. Allow yourself to enjoy a treat like this mid-week and learn how to incorporate healthier alternatives into your diet!
